What to Plant in January/February
This is the best time of the year for growing veggies in Florida. You can think of it as our main growing season. If you would like to start a vegetable garden. Now is a great time. The days are starting to let a little longer each day since the winter solstice and plants love the potential for more sunshine.
You can plant greens and flowering crops like: Lettuces, kale, collards, swiss chard, mustard greens, arugula, broccoli, cilantro, dill, parsley, oregano, thyme, cauliflower, cabbage, snap peas, snow peas. And you can grow root crops like: carrots, beets, radishes, turnips, parsnips, rutabaga, onions.
This time of year you can start your Spring Plantings of: tomato, pepper, and eggplant seedlings in small pots. Keep them in a protected area in case of a light frost. It is a good idea to get these seedlings started early, because they will not grow very long past May in the Florida heat and humidity.
